One thing restarting does is to refresh all the swap files, which build up
over time. If you experience another slowdown like that, check free space on
your system disk, and see if there is room for the swap files. Then restart
and check free space again; I bet it will be lots more.

I saw that kind of slowdown on my iBook when I'd been up several days
running dozens of applications. Restarting cleared things up. Now, on a
machine with a much larger partition for the system, I don't experience that
problem.
