You can configure your IMAP mail account in Entourage so that it retrieves email from your local IMAP server but sends email to your normal/remote SMTP server (typically your ISP's server). In the Account Settings tab in the Edit Account dialog: there is one setting for the incoming mail server, and another one for the outgoing mail server. In addition Entourage allows you to store a copy your sent messages in a folder on the IMAP server as well, in the Advanced tab of the same dialog, so you have both your received and sent mail centralized/archived on the IMAP server.
