I think the 512MB suggestion is coming from a small group of people who keep an exceptional number of windows open, and run a lot of applications simultaneously. I have a Powerbook with 384 MB, and it has always run very well, even with the entire office suite and several other applications open. I have never noticed any swapping on my system with that load.
