What's an "email list"?

The rest of what? You're not being entirely clear.
If the display name has any punctuation, such as a middle initial with a
period ("Joe A. Blow") or a comma ("Blackguards, Inc"). Entourage always
puts it in quotes. It has to, otherwise the period will be interpreted as
art of an email address and the comma will be interpreted as a separator
between recipients, making a mess. In other cases, the sending email client
will out even ordinary display names ("Joe Blow") in quotes, but Entourage
is smart and doesn't display those in the frame headers. Nevertheless,
they're there. So if you copy and paste, you'll see them Blame the senders.
