There's nothing to stop you using any of the other 8 custom fields at the bottom of the various tab/pages for telephone numbers if you want to. You can rename the custom field names to anything you want, across the Address Book (not on a per-contact basis - they apply to everyone), so you'll probably want to except the first 3 or 4 for other uses, or vice-versa.
