If you examine the headers of your dad's messages, does his email address exactly match what you have in your Address Book? (Even a slight difference will cause it to not match.) Do you have any regular Rules that also try to catch junk mail? If so, possibly one of those is at fault.
One other trick to try: access your Entourage address book, open your dad's contact record, make a minor edit (add a space and remove it, for example), and then save it back. See if that helps. Sometimes Entourage seems to forget that a contact exists, but "touching" the record will remind it of its presence. Another clue would be that when you begin to type your dad's name or address in the "To" field of a new message, his record does not show up in the autocompletion popup list.
