There is a script called "Merge Contacts" by Eric Hildum and Allen Watson that does this, currently on version 3.1.1 for Entourage 2001 and 4.1 for Entourage X. <http://www.macscripter.net/scriptbuilders/?search=Merge+Contacts>
There is also a script called "Merge Two Contacts" by Paul Berkowitz.
