Scott,

What you need to do is turn down the master volume control on the system and
use the iTunes volme to increase the music to the desired level.  Think of
it this way - the master Volume sets how loud that loudest sound will be on
your mac, then the iTunes volume slider goes from 0 to 100% of the master
volume setting you have.

So, simply set the volume of the system so that the sounds from Entourage
are acceptable to you, and then use the volume in iTunes to adjust the music
as loud as you want.
