If you continue to use a Palm with v4.1, yes, the Entourage conduit as it exists now will continue to work. So will the regular Palm conduits with Palm Desktop.
If you buy a new Palm that has Palm OS 6.0, then you'll be dependent on Mark/Space, who I'm sure will do a great job (better than Palm's probably). Their Cli� Missing Sync is terrific. If you stick with older software it's not going to implode or anything. People still on old Macs using OS 8 still can run the software written for that OS.
