How about this one? ;-) Entourage-Talk uses LetterRip and I get the above result, but I also get the same result from a number of different lists. Since every digest has a "to" address in the headers, and that field could easily be included in individual messages "burst" from a digest, it appears to me -- though I could be wrong -- that it was simply a design decision for Entourage to not include the "to" header/field in those individual messages.
