I agree that this would be a great feature. It reminds of the way you can hide inactive bank accounts in Quicken -- very handy. A workaround for the moment might be to archive the project, if Entourage indeed supports project archiving. (I haven't had time to explore the Project Center yet, nor the new archive feature, either.) Assuming for the moment that projects can indeed be archived, you could just drag the inactive projects into an external folder and then drag them back in temporarily when you need to look something up.
