I use ChronoSync, which gives me a nifty option. It lets me set pre- and
post-synchronization scripts. Here's how that's handy.

I leave Entourage running all the time (and my PowerBook, too, for that
matter). I have ChronoSync set to backup at a particular time. Now, we know
that it's not a good idea to backup a database while it's being modified, so
I have a pre-sync script that sets Entourage to work offline. When the
backup is completed, the post-sync script turns it back online.
