You're right. Work around it by first making a new "No due date" category,
then sort tasks in the task List by date, shift-click to select all "No due
date" tasks, press cmd-; or right-click and choose "Assign Categories",
check the "No due date" category in the Categories window that comes up, do
NOT check Make Primary, click OK, and there you are.

It's easy enough to sort the Tasks List by date since they all bunch
together at bottom or top. But I guess if you want to first gather them,
then sort by (primary) category or task name, you'll want to make a custom
view. Simply set the criterion for  Tasks/ "Category is No due date", and go
there. In future, remember to add the category when making No due date
tasks, or revisit the Tasks pane to update from time to time.
