(It's not tab, Return or Enter) Generally, you can't edit the address once it has been resolved to match a contact (the little person icon appears). The one change you can make is via contextual menu; if the contact has multiple e-mail addresses, the contextual menu will list them and allow you to change them. Other than that, if you want, for instance, to change the address to a different person, you'll have to remove it from the field and start over.
