Many of the account settings are scriptable, so you can 'set DAV requires
SSL to true' etc by script. It should be possible to set a script to set all
the settings at once for 'home' or 'work' configurations.

Not having an exchange account available to me, I can't test this out. Can
you say what settings you need to change?
