In the HotSync program, click on HotSync : Conduit Settings (or Command - J) Then click on the Entourage conduit. Go to the Address Book settings. Choose to Synch ALL contacts (probably not for you), or a category not to sync, or a category to sync. This last option might be the best, given your interests. In Entourage, set up a category called "Sync". Add Sync as a *secondary* category to all addresses you want to sync. Then choose to sync *only* items in the Sync category. This will not interfere with any of your other categories or work, and you'll only sync the addresses you want to.
