There is not an "out of office assistant" in Entourage that I know of, unless a script is created and used.  The 35 Mac users in our division use either Outlook Web Access (OWA) via Firefox 1.0.2 or Mozilla 1.7.6 to utilize the "out of office assistant" or RDC (remote desktop connection) right into a file and print server, do a session with Outlook 2003, and use the "out of office assistant" in Outlook.
 
It has been rumored but not confirmed that MBU is working on some type of feature to be put into Entourage that was in Outlook 2001 for OS 9.  But don't hold your breath.
