I'm having the same problem. I had assumed that it was just that I had somehow managed to click on the address book icon in my calendar window and so was getting two address book windows and no calendar window, but I just checked: made sure I had a calendar window, and address book window and a mail window open (that's my normal situation). Quit and restarted Entourage. Now I have mail and two address book windows, no calendar. I'll save this message and try changing the extra address book window back to calendar and closing the other two and quitting and restarting. Interesting - when I did that, it reopened with the calendar window. Next thing is to have calendar and mail but make calendar the front one. Doing it that way, the calendar window changed to an address book window. Does seem as if there's some sort of bug here. OK, I've now tried a bunch of different configurations and the relevant thing seems to be whether the calendar window is the front one when I quit. If it is, E'rage reopens with the same windows it had when I quit. If calendar is not the front window when I quit, then the calendar window changes to an address book window (whether or not there is already an address book window open).
