You can use Paul Berkowitz's "Sync Entourage-Address Book" and "Sync Entourage-iCal" scripts to synchronize data between Entourage and iCal & Address Book. Then you can use iSync to synchronize with the phone. You can get Paul's scripts here: <http://www.scriptbuilders.net/>
Another program that does something similar is e2Sync. <http://www.e2sync.com/> There is also a simple program that lets you directly transfer contacts between Entourage and a phone called OnSync.
