OK...it's true that it doesn't do the exact same thing as "tell app to quit" because the AppleScript route prompts to save open docs.

If your user on the machine is an administrator you can try:

echo 'yourpassword' | sudo -u herusername osascript -e 'tell application "Database Daemon" to quit'

This should cause the AppleScript command to be run in her user context and quit her Database Daemon.
