No. You can adjust settings in the Entourage Conduit to sync only one category, or all except one category, for contacts, events and tasks, but not for notes (no one knows why not). I guess you could archive (File/Export/Archive) All Notes, then delete all notes except the ones you want to sync (easiest if you sort by category, select all, then shift-click to de-select top and bottom note of the category), then sync notes, then delete those too, then import the archive. (You'll lose your categories, though.)
