I could be missing something, but I accomplish synced *incoming* email by
using the "leave on server" settings.  I can "remove from server" all the
spam and junk, so that I don't get it on both machines, but leave all the
legit messages.  Actually, I have both machines set NOT to "delete mail from
server when deleted from this machine," so that I can delete work-related
mail that I don't want at home, but still receive it at the office.

This doesn't sync *outgoing* mail, which may be what you mean by the above.
Of course, you can always BCC yourself if you just need a record.
