In Entourage's preferences, there is now a Sync Services option; where you can toggle on/off syncing contacts, calendars, and notes to/ from AddressBook, iCal, and dotMac.

Yes. Otherwise they'll be providing an Entourage calendar that syncs up to dotMac, and back down to this Mac (and the others).
When I’m ready to turn Sync back on again, how do I tell Entourage to overwrite iCal?
By having deleted the existing Entourage calendar in iCal.
