I think there are two things I didn't make clear when I asked my question. First, the icon problem occurs when the files are attached in Entourage (11.2.3). The affected PDF files display as Adobe icons in the finder, but once attached to email, they then (sometimes) become Preview icons in the Entourage attachments pane. This happens unpredictably. I often email two PDFs simultaneously (one a report, the other an invoice). Sometimes neither changes, sometimes only one of them changes, sometimes both change.
Second, I often send these files to other Mac users who may or may not have a default PDF application setting. If they have a default setting, OK, fine. If they do not, I prefer that the documents open with Acrobat Reader or other bona fide Adobe PDF app when double-clicked, since Preview does not always display/print PDFs correctly. Or maybe I'm confused about something here. I took your advice and looked at the Type and Creator codes of some of the attached PDFs. Sure enough, the affected icons did not have anything in the Creator field, while the unaffected ones had CARO. Oddly, when I drag the Preview icon files out onto my desktop, they turn into Acrobat icons in the Finder whether or not they have a creator code. I also wonder why some of the files have creator codes and others don't. Anyway, your answer is making me realize that my question is less of an Entourage thing and more of an Acrobat thing. Oh well.
