The icon shown in the System Preferences pane is that of Apple's Mail.app but Entourage messages also fall under this category. Thus, you must have "Mail Messages" checked in Spotlight's preference pane in order to receive results from Entourage. That's essentially all the setup you can do with Spotlight.
