You can't actually edit the serial number. The Microsoft solution is to use the Remove Office Tool, then reinstall. Make sure you select the option to Keep Files You Created so that your Entourage database will not be thrown out.
After you reinstall, nothing should have changed... but it might be a good idea to back up your data before you try it.
