There are several solutions offered on the Entourage Help Page
<http://www.entourage.mvps.org/faq_topic/performance.html> that might help.
The next time it happens, open the Activity Monitor (application found in
Utilities folder) and sort by CPU | %CPU. This might give you a clue as to
the cause.

My personal experience was that the Microsoft Database daemon started
running at near 100% after recent system updates causing spinning rainbows
and long delays.  I disabled Spotlight and the situation seems to have
improved.

Let me know what you find.
