Two things you can do:

Set the message 'character set' (under the 'options' button in the message
toolbar) to Western European (Windows).
Or;
Under the Tools menu, select 'Autocorrect', then the 'autoformat' pane, then
deselect the Replace 'Straight quotes with smart quotes' checkbox
Or; (yes, I know that's three)
Use plain text instead of HTML.
