I also checked it after my email yesterday -- I had "Send All" grayed out and confirmed that I had turned that off under "Schedules" -- I turned it back on and it was immediately selectable in the menu and after I unchecked it again, it was still selectable until I quit and restarted Entourage, then it was grayed out again.
