I find that if I set them as desired, close and immediately reopen the preference is remembered. So try setting it like you want, close it then reopen to see if it sticks. I'm guessing but this could be an OS problem and not Entourage specific. Every time we have an OS update there are several features I have to reset. One is folder actions.
