Actually you can dispense with the comma if you would rather use the Enter key.

Smart Address item is at Mail>Preferences>Viewing

your disbelief is well founded.

As with Entourage, after typing one address, type a comma, then another address.

While you are at it, go into Mail.app's preferences & turn off Smart Addresses - a very annoying "feature" IMO
