I can provide some feedback:
#1: Sync Services exist, but from my experience, it is just as flaky
as ever. Three or four times per day when I am not doing anything in
particular, I get a Sync Services error message from Entourage. And if
I am syncing my iPhone, I will typically get two or three. Very
frustrating. If anything, Sync Services is flakier with 2008 than with
2004. At least, for me. YMMV.
Note also that in two weeks of use, I have been required to rebuild my
E'rage database three times.
#2: Can't speak to that, since I no longer use Paul's script.
#3: In Entourage, you can keep a calendar locally as well as synced to
an Exchange server.
