In Entourage 2004, if you open a message from the _Inbox_, and then use the
message bar's "Move" icon, then the folder at the top of the list is the
last folder used to move a message.

However, the original post asked about a message opened by using Spotlight.
If you open a message using Spotlight, then the folder shown in the message
bar's "Move" icon is that message's current folder.  This is not the
"Options -> After sending, move to...".

As a matter of fact, open any message in any folder, click and hold on the
message bar's "Move" icon, and you see the folder in which that message now
sits.
