Perhaps Entourage is remembering a recent email from that address. To clear
that behavior, clear the Recent Addresses:
Entourage -> Preferences -> Compose
-> Recent Addresses -> [x] Clear list
Also check her listing in your Address Book entry for your wife, and see if
the wrong address has been added, and if it is marked as the default address
for her.
Address Book -> [Her Name] -> Name & E-mail
-> [choose the default email address]
