Center weighted averaging. All the readings of the metering segments 
are averaged, but the central ones are given higher weight. Great for
scenes that aren't very contrasty and overall are close to a medium 
brightness (18% gray ...) Can also be used for overall brighter or 
darker scenes, but the user has to apply exposure compensation himself.
This obviously needs some experience and knowledge about light metering.
You also don't know just *how much* more weight is given to the central
segment readings, also a matter of learning by experience.

Selective metering. Only the average brightness within one segment, 
usually the one that covers the active AF sensor or the central one
is used. (Like spot metering, but with a *big* spot ;-)) You can use 
it to meter a part of the image that you want to appear with a medium
brightness on your final slide or neg (the prints are another story,
there you are at the mercy of your lab). You can also meter brighter
or darker parts of the image, but have to apply exposure compensation
yourself then, just like with center weighted average.

Evaluative metering. The average value for each segment is metered,
then some unknown (by the user) semi inteligent algorithms try to 
figure out the best exposure. May work quite well, but may also fail
miseraly sometimes. And the worst thing: You'll need some experience
to predict when it will fail and by how much. And even then your 
prediction may be wrong sometimes :-( Anyway, this is kind of a 
P&S mode, the best for users that don't know very much about light 
metering.
