I've used this combination when I had to, & there are a few factors to
consider.
First of all, there is a difference with the 2x and without, or with the 1.4
instead. It simply will not be as sharp. OTOH, it will help you get some
shots you wouldn't otherwise.
The NEW Canon 2x is supposed to be optically better than the existing 2x, so
if you're going to go this route, get that one.
In any caes, if you're shooting L lenses I think you're better off with
Canon's Matched TCs.
You can do 800mm hand held, but at that focal length, your body may move
more than the IS can compensate for, and the pictures will be even softer.
Even leaning against a tree helps. A monopod makes a difference, and of
course a tripod is even better. My own experiences is that with this
combination the IS works just fine on a tripod.
