Some tidbits:

Nik Color Effects digital filters (for photoshop) have
a B&W conversion filter that simulates the use of
different color filters on black and white film. 
(i.e., choosing red filter darkens blues).

Also, check out www.piezography.com and
www.inksupply.com for quadtone (and nextone) inksets. 
These are replacement inks that use, instead of the 3
(or 5) color inks, 3 or 5 different shades of gray ink
to give much smoother B&W prints.

Finally, check out the Leben.com epson-inkjet mailing
list to talk to people who are using these inks (www.leben.com/lists).
