Thanks all for your responses to this - actually I have now managed to get my flash working in Av mode. I think I had it set to rear curtain synch and perhaps one of the connections wasn't properly seated because when I tried it again today and it worked perfectly.
Just did a load of test photos with the 300EZ on and off camera and with a reflector as well so I'm just off to look at my pictures to see what the results are!
