This is possible and will certainly result in pretty good quality.
But the shooting is really cumbersome and the stitching eats a lot 
extra time. Okay if you don't need to value your time, but....

Noooo.... one straight shot on MF and a subsequent 
drum scan and you're done.

With a proper lighting setup moving the image on 
the wall will be easier. Just prepare vertical and
horizontal guides or (luxury!) rails to slide
the paintings on.

No, you set the lighting for exactly the snippet
of painting which will be in front of the target frame.
