The last I used my EOS-3 with 550EX in E-TTL was at a holiday party. I use
mode M and set the shutter to 1/60 secs and aperture to F6.3 or F7.1 (you
could use F8 I just try to get more ambient light where I can). I use a
28-135mm IS lens (I love this lens and IMO it is as sharp as needed). For
typical portraits the range is 70mm to 85mm depending on couples or singles
and how tight you want it.
Film: Kodak 400VC (I do like the 160VC though, except this was a nightime
event and poorly lit room). 
Now some may ask why Kodak? I like the VC because the colors are a bit more
saturated compared to NC and most people like the VC as it is more contrasty
than the NC although I do use NC for certain events as the shadow detail is
superb. Even when you under/overexposed the VC the colors still come out.
All films will look good perfectly exposed but the better films will look
good when your exposure is not perfect. That IMO is the difference between a
good and a great film.
Looking at the contact sheet, one shot one out of the couple were wearing
white and the E-TTL underexposed some.  Another shot, both were wearing
white and beige and E-TTL underexposed more, not tragically more but enough
to lose a bit of the light producing a slightly soft print. All else where
they were wearing black, gray, blue, etc. came out perfect. No shots what
were unprintable. I think next time if both parties are wearing white I will
overexpose 1/2 to 1 stop and this should clear up the underexposure.
