The Ec-CIII is easier to use while manual focusing. The images snap in and
out of focus more apparently than the laser-matte screen used in the 3 and
consumer EOS bodies. The Ec-N is brighter, but the extra brightness makes it
harder to manually focus. With the Ec-N screen, it's rather difficult to
accurately focus a wide-angle lens. The Ec-N screen (and the screens used in
consumer bodies) are made brighter since Canon is assuming that the user is
likely to put a slower zoom lens (e.g. 28-135/3.5-5.6) on the body. The
slower lenses provide less light for the viewfinder, and the screen attempts
to compensate. 

IIRC, the Ec-N has more of a fresnel pattern.

No, Canon intended to have the interface and custom functions of the 3 and
1v match as closely as possible, since they figured that the pros who have
bought the 3 while waiting for the replacement for the 1n will most likely
end up purchasing the 1v. When the new image-stablized super-telephotos
became available, Canon also made available an upgrade to the firmware on
the 3 to add a custom function for the settings of the AF stop buttons. This
custom function number is CF19 on both cameras. Note that there is no CF18
on the EOS 3.

You can look at this the other way, and say it's a way for Canon to get
extra money off the EOS 3 buyers who want a different screen for easier
manual focus. After I installed the Ec-CIII in the EOS 3, I found that I
don't need the 1v after all.
