It's because the reading will be wrong. Therefore, simply do the reading
before the shift, shift the lens, and take the picture. Note that when you
shift the lens you will move some parts into the picture that where not in
it before and other parts you move out. Thus, you should point the camera so
that the same part is measured which will be in the picture after shifting
the lens. This is especially important if you use matrix metering. It sounds
obvious but when you work on a tripod you might be tempted to just leave the
camera as it is.
