Under "normal" conditions, (i.e. good light and contrast), 1 point is
quicker.

However in low light and/or low contrast, switching to more than 1 point can
make AF quicker, or even possible. If only one point is used, if that falls
on a low contrast part of the subject, AF can be slow, or even impossible.
If other points are on higher contrast areas, then AF can be much improved.
