Well, I think the eyepiece shutter really matters most if you're using the camera's built-in meter to meter the scene. Stray light from the viewfinder can throw this metering off. But in manual mode (and bulb) the camera has already got its aperture and shutter speed settings set, so this isn't an issue.

If you do want to cover your shutter I find that the grey caps from Kodak film canisters fit a lot of camera eyepieces nicely and are free. You could also ask to see a camera shop's junk box to see if there are any rubber eyepiece covers (the type which attach to camera straps) lying around. I have a couple of those. Note that EOS cameras usually ship with straps that have such covers built in on one end of the strap.
