Alex,

First, use the Off Camera Shoe for the flash to ensure it fires.
The ST-e2 is great but unless you are in a closed room the flash pulse from
the STE2 may not be received by the flash so you may miss a shot. The STE2
transmits a short pulse which can bounce off walls, celings, etc.
For outdoor shots you need to put the flash in front of the STE2 with the
front turned backward (the 550EX can twist easily enough to allow this)
facing the STE2.

Now, your question on the AV mode, the reason you should not use it is that
in low light the shutter speed will be too slow.  It does not automatically
go to 1/60 sync speed.
