Deconvolution is a standard technique in micrography and astronomy.

There is the commercial "AutoDeBlur", but you need a Silicon Graphics
Workstation:

But there does exist a poorly documented deconvolution function in the
Panotools suite. (Not "blind", in that you have to specify a Point-Spread
Function):

You should also try "Unshake", but it is a Java application - which might

At least the last one can be used easily with images from your EOS camera.
