Up/Down is oversimplifying the issue a bit: you need full GPS location plus 3D pose and rotation sensors. With all that data as input to such programs as Pano Tools you cound do "proper" persective correction rather than have to guess aspect ratios. For a quick fix pour 20ml of ink into the fromt of your lens: the meniscus should give a clue as to which way the lens was tilted.
