Hans, I used to own similar set to yours (EOS-3 with booster, 550, and
28-70/L and 70-200/2.8L). So far did several events, including two
weddings with this gear. Proper flash technique is mandatory as yuo
certainly realize. For ETTL, be sure to keep your active AF point in
top of either people's skin (bride or groom) assuming regular caucasian
tone. In such case flash exp. can be expected to be precise and keep
entire scene within good range. Shootign people, I always strive to
keep teh current active AF point on top of their skin and obtain
perfect exposures including those very delicate fill-in situations.
Highlights and shadows preserve their details in most cases, until
we're talking about a real extreme ranges (shiny surfaces, for
instance).
Watch out for reflective surroundings (mirrors, windows, shiny cars and
so forth....), in such cases I think FEC would be required, though I'm
not really experienced with FEC.
Also, flash bracket is almost must for good flashy photos,
particularily for vertical (portraiture) orientation - avoids ugly deep
shadows at subject side. Flash diffuser may also be useful.

>From my own experience with EOS-3 ETTL combined with 550EX - the most
improtant is to keep an eye on active AF point to cover the area you
intend to (so you will know whether this area specifically needs exp.
compensation or not), and you're set.
