Canon give you access to the full contents of the RAW file as a
developer as long as you sign up for the SDK, so there is no reason that
third party conversion software shouldn't work flawlessly?

I understand Nikon and others do the same.
DNG is not an open standard - it is a "royalty free" format from Adobe,
who IMO do not have a particularly good reputation in the standards
arena. For my money it seems the conversion to DNG is essentially lossy
- while the image data and sensor layout information is stored clearly,
as I understand it there is no clear way to map metadata, so things that
aren;t understood properly by the conversion software can get trashed
around. That is, unless you include the original raw file, which kind of
defeats the object of the format in the first place as you still need a
CR2 (or NEF,...) parser to understand that information. It would also
mean, potentially, that cameras have to double the size of the DNG file
if the DNG format cannot store the information the camera wants to save
in an understandable manner.
