Did
you know that some aircraft have real castering nosewheels? For instance,
the Diamond DA40, or the Cirrus SR20. These aircraft steer with
differential braking. By stating on an Ercoupe website that the nosewheel
will caster implies the common understanding among pilots, that the nosewheel is
not connected to any steering linkage, and directional control on the ground is
done through differential braking.
Perhaps you need to look at some aircraft resources?

Did you ever notice that when you are driving a car and turn the steering wheel to make a corner, the wheel wants to turn back to center? It feels like there are springs that try to center the wheel. There are no springs. It does that because of the "caster" that is set when the wheels are aligned It's the angle that is set into the front king pin. The Ercoupe nose wheel does exactly the same thing, due to the angle of the nose strut. This has nothing to do with your definition from the Online Dictionary. You need to look at some automotive resources.
